Method
Extra Meat Portion
- 1
Prepare the meat
If your additional meat is raw, cook it first to a safe internal temperature appropriate for the protein (chicken 165°F / 74°C, pork 145°F / 63°C with rest, beef/lamb to desired doneness). If using pre-cooked or leftover meat, trim excess fat and cut into uniform bite-sized slices or shred to measure approximately 1 cup.
- 2
Heat and season
Place a skillet over medium-high heat and add 1 tablespoon neutral oil. Once shimmering, add the 1 cup of prepared meat in an even layer. Let it sear undisturbed for 1 minute to develop a light crust, then stir or toss to heat through, about 1–2 more minutes.
- 3
Finish and taste
Sprinkle 1/4 teaspoon salt, 1/8 teaspoon black pepper, 1/4 teaspoon garlic powder, and 1/4 teaspoon smoked paprika (if using) over the meat. Stir to combine and cook another 30–60 seconds to bloom the spices. Taste and adjust seasoning; add the lime or lemon wedge for brightness if desired.
- 4
Garnish and serve
Transfer the extra meat to the dish (sandwich, bowl, tacos, etc.) or to a small serving container. Sprinkle with 1 tablespoon chopped fresh parsley if using. Serve immediately so the extra meat remains warm.
