Garlic Lemon Aioli (if making fresh)

    Make aioli

    In a small bowl combine 1/4 cup mayonnaise, minced garlic, 1 tsp fresh lemon juice, 1/2 tsp olive oil, 1/8 tsp salt and a pinch (1/16 tsp) of black pepper. Whisk until smooth and adjust to taste. Refrigerate until assembly. (If using store-bought garlic lemon aioli, skip this step and reserve 2 tbsp for the sandwich.)

    Prepare fries

    Preheat oven to package instructions if using frozen fries (typically 425°F / 220°C) or heat oil to 350°F (175°C) for frying fresh fries. If baking, spread fries on a baking sheet in a single layer, toss with 1 tbsp vegetable oil, 1/2 tsp salt and 1/8 tsp paprika (optional). Bake according to package or 20–30 minutes until golden and crisp, flipping halfway. If frying, deep-fry or shallow-fry until golden, drain on paper towels and season with salt immediately.

Sandwich Assembly and Cooking

    Prepare protein

    If using raw chicken breast: butterfly or pound to 3/4" thickness. Season with 1/8 tsp salt and a pinch of black pepper. Heat a grill pan or skillet over medium-high heat with a thin coating of oil. Grill chicken 4–6 minutes per side until internal temperature reaches 165°F (74°C). Let rest 3 minutes, then slice thinly. If using pre-cooked roasted turkey slices, arrange 5 oz sliced turkey and proceed to assembly.

    Prepare avocado

    Halve and pit the avocado. Scoop out half avocado (about 1/2 avocado) and slice thinly. Toss the slices gently with 1/2 tsp fresh lemon juice and a light pinch (1/8 tsp) of salt to prevent browning and season lightly.

    Prepare bread

    Mix softened butter with 1 tbsp grated Parmesan. Spread the butter-Parmesan mixture evenly on the outsides of both sourdough slices.

    Assemble sandwich

    On the un-buttered side of one slice, spread 1 tbsp garlic lemon aioli. Layer the sliced chicken or turkey (5 oz), then place provolone slices over the warm protein so they start to melt, arrange the sliced avocado evenly, and top with 2 cooked bacon strips (break in half if needed to fit). Spread 1 tbsp aioli on the un-buttered side of the other bread slice and place on top, buttered side out.

    Parmesan crust and melt

    Heat a skillet or griddle over medium heat. Place the assembled sandwich in the skillet and press gently with a spatula. Cook 3–4 minutes until the bottom is golden brown and Parmesan crust forms. Carefully flip the sandwich and cook another 3–4 minutes until the second side is golden and the provolone is fully melted. If the bread browns too quickly before cheese melts, lower heat to medium-low and cover loosely with a lid for 1–2 minutes to encourage melting.

    Rest and slice

    Transfer sandwich to a cutting board and let rest 1 minute. Slice in half on the diagonal and serve immediately with fries.
