1. Prepare the Ingredients

Start by cleaning the chicken livers under cold water and patting them dry with paper towels. Remove any visible sinew or greenish parts.

2. Caramelize the Onions

In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, for about 15-20 minutes until the onions are golden brown and caramelized. Remove from the skillet and set aside.

3. Cook the Ham

In the same skillet, add the diced country ham and cook for about 5 minutes until it is slightly crispy. Remove and set aside with the onions.

4. Fry the Chicken Livers

Increase the heat to medium-high and add the remaining olive oil and butter to the skillet. Once hot, add the chicken livers, season with salt, black pepper, and thyme. Cook for about 3-4 minutes per side until browned and slightly pink in the center.

5. Combine and Serve

Return the caramelized onions and crispy ham to the skillet with the chicken livers. Pour in the demi-glace and stir gently to combine. Cook for an additional 2-3 minutes to heat through. Serve warm.
