    Marinate the Fish

    In a bowl, combine the soy sauce, lemon juice, grated ginger, and cornstarch. Add the fish fillets and coat well. Let it marinate for at least 15 minutes.

    Prepare the Vegetables

    While the fish is marinating, slice the bell peppers, julienne the carrot, chop the green onions, and mince the garlic.

    Make the Spicy Sauce

    In a small bowl, mix together the chili paste, honey, and rice vinegar. Adjust the chili paste according to your preferred spice level.

Cooking

    Stir-fry the Fish

    Heat a large skillet or wok over medium-high heat. Add a tablespoon of oil. Once hot, add the marinated fish fillets and cook for about 3-4 minutes on each side until they are golden brown and cooked through. Remove from the skillet and set aside.

    Stir-fry the Vegetables

    In the same skillet, add another tablespoon of oil if needed. Add the minced garlic and stir-fry for about 30 seconds until fragrant. Then add the sliced bell peppers, julienned carrot, and pineapple chunks. Stir-fry for about 5 minutes until the vegetables are tender but still crisp.

    Combine and Serve

    Return the cooked fish to the skillet with the vegetables. Pour the spicy sauce over the mixture and gently toss to combine. Cook for an additional 2-3 minutes until everything is heated through.

Garnishing

    Garnish the Dish

    Sprinkle the toasted sesame seeds and chopped cilantro over the stir-fry just before serving.
