Prepare the Protein
Choose your protein (beef, pork, chicken, or fish) and cut it into bite-sized pieces.

Prepare the Vegetables
Slice the bell pepper and carrot, and drain the bamboo shoots if they are canned.
Cooking

Sauté the Protein
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add your choice of protein and sauté until browned (about 5-7 minutes).

Add Curry Paste
Stir in the Thai red curry paste and cook for 1-2 minutes until fragrant.

Add Coconut Milk
Pour in the coconut milk and stir well to combine everything. Bring to a gentle simmer.

Season the Curry
Add fish sauce, brown sugar, lime juice, and chili flakes. Adjust seasoning to taste, allowing the curry to simmer for another 2-3 minutes.
Finishing Touch

Garnish and Serve
Remove from heat and stir in Thai basil leaves. Serve the curry hot over rice or noodles.
