Prepare the Protein
Choose your protein (beef, pork, chicken, or fish) and cut it into bite-sized pieces.

Prepare the Vegetables
Slice the bell pepper and zucchini into thin strips. Rinse and drain the bamboo shoots.
Cooking

Sauté the Protein
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the protein and sauté until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

Make the Curry Base
In the same skillet, add the green curry paste and sauté for about 1-2 minutes until fragrant.

Add Coconut Milk
Pour in the coconut milk and stir to combine with the curry paste. Bring to a gentle simmer.

Combine Ingredients
Add the sautéed protein back into the skillet along with bamboo shoots, bell pepper, and zucchini. Stir well to coat everything in the curry.

Season the Curry
Add fish sauce, sugar, lime juice, and chili flakes. Adjust the seasoning to your preference. Simmer for an additional 5-10 minutes until the vegetables are tender.

Garnish and Serve
Remove from heat and stir in the Thai basil leaves. Serve hot with rice or noodles.
