Method

Preparing the Filling

    Cook Rice Noodles

    Bring a pot of water to a boil. Add the rice noodles and cook according to the package instructions (usually about 3-5 minutes) until tender. Drain and rinse with cold water. Set aside.

    Prep Vegetables

    Julienne the carrot, cucumber, and red bell pepper into thin strips. Rinse the mint and cilantro leaves and set them aside.

    Combine Filling

    In a large bowl, combine the cooked rice noodles, shredded chicken, julienned vegetables, mint, cilantro, and lettuce leaves. Toss together gently to mix.

Rolling the Spring Rolls

    Prepare Rice Paper Wrappers

    Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it softens. Lay it flat on a clean surface.

    Fill and Roll

    Place a small handful of the filling mixture in the center of the rice paper. Fold the sides over the filling, then roll from the bottom up to create a tight roll. Repeat with remaining wrappers and filling.

Making the Special Sauce

    Mix Sauce Ingredients

    In a small bowl, whisk together the peanut butter, soy sauce, honey, lime juice, chili sauce, and water until smooth. Adjust the consistency with more water if necessary.

Serving

    Plate the Spring Rolls

    Arrange the spring rolls on a serving platter and serve with the special sauce on the side for dipping.
