Prepare the Protein
Cut the chicken breast (or chosen protein) into bite-sized pieces. Season lightly with salt and pepper.

Prepare the Pineapple
If using fresh pineapple, cut into chunks. If using canned, drain well.
Cooking

Cook the Protein
In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the chicken (or chosen protein) and stir-fry for about 5-7 minutes until cooked through. Remove from skillet and set aside.

Stir-fry the Vegetables
In the same skillet, add another tablespoon of oil if needed. Add the sliced bell pepper, carrot, onion, and broccoli. Stir-fry for 3-4 minutes until they are tender but still crisp.

Make the Sauce
In a small bowl, combine soy sauce, ketchup, rice vinegar, sugar, chili paste, cornstarch, and water. Stir until well mixed.

Combine Everything
Add the cooked protein and pineapple chunks back to the skillet with the vegetables. Pour the sauce over the mixture and stir well. Cook for an additional 2-3 minutes until the sauce thickens and everything is heated through.

Garnish the Dish
Sprinkle sesame seeds and sliced green onions on top before serving.

Serve the sweet and sour dish hot over a bed of steamed rice or noodles.
