Method

Preparing Sticky Rice

  1. 1

    Soaking the Rice

Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or preferably overnight.

  2. 2

    Cooking Sticky Rice

Drain the soaked rice and place it in a steamer lined with cheesecloth. Steam the rice over boiling water for about 30-40 minutes until tender. Once cooked, transfer the rice to a bowl.

  3. 3

    Flavoring the Rice

In a saucepan, combine the coconut milk, sugar, and salt. Heat over medium heat until the sugar dissolves. Pour this mixture over the warm sticky rice and mix well. Let it sit for 10-15 minutes to absorb the flavors.

Preparing Tropical Fruits

  1. 4

    Cutting the Fruits

Peel and slice the mango and banana. Cut the pineapple into small chunks. Arrange the fruits on a serving plate.

Assembling the Dessert

  1. 5

    Serving

On individual serving plates, scoop the flavored sticky rice. Top with sliced tropical fruits and a scoop of vanilla ice cream. Drizzle with any leftover coconut milk if desired.
