    Prepare the Ingredients

    Peel and devein the shrimp, and chop them into bite-sized pieces. Dice the carrots and chop the green onions (separating the green parts from the white). Mince the garlic and ginger.

    Cook the Eggs

    In a large skillet or wok, heat a small amount of oil over medium heat. Crack the eggs into the skillet and scramble until fully cooked. Remove the eggs from the skillet and set aside.

    Cook the Shrimp

    In the same skillet, add a bit more oil if necessary and increase the heat to medium-high. Add the shrimp and cook until they turn pink and opaque, about 3-4 minutes. Remove the shrimp from the skillet and set aside.
