    Slice the onion, bell peppers, and carrot. Mince the garlic and ginger. Chop the baby corn and broccoli into bite-sized pieces. If using chicken, cube it. If using tofu, cube and press it to remove excess moisture.

Cooking

    In a large pan or wok, heat the vegetable oil over medium heat. Add the minced garlic and ginger, sautéing for about 1 minute until fragrant.

    Cook the Onions

    Add the sliced onion to the pan and cook for about 2-3 minutes until translucent.

    Stir in the red curry paste, cooking for another 1-2 minutes to release its flavors.

    Pour in the coconut milk, stirring well to combine with the curry paste. Bring the mixture to a simmer.
