Prepare the noodles
Cook the rice noodles according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside.

Prepare the sauce
In a small bowl, mix together soy sauce, fish sauce, tamarind paste, brown sugar, and lime juice. Stir until well combined and set aside.

Cook the protein
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the shrimp and cook for 2-3 minutes until they turn pink. Remove and set aside.

Cook the tofu
In the same skillet, add a little more oil if needed and add the cubed tofu. Cook until golden brown on all sides, about 5-7 minutes. Remove and set aside.

Stir-fry the vegetables
In the same skillet, add a bit more oil if necessary. Add minced garlic and sliced red bell pepper, stir-frying for about 1-2 minutes until fragrant. Add chopped green onions and bean sprouts, and stir-fry for another 2 minutes.

Combine all ingredients
Add the cooked rice noodles, shrimp, and tofu to the skillet. Pour the sauce over the top and toss everything together until well coated and heated through, about 2-3 minutes.
Serving

Garnish and serve
Remove from heat and serve hot, garnished with chopped peanuts, fresh cilantro, and lime wedges.
