    Prepare the Noodles

    Soak the wide rice noodles in warm water for about 30 minutes or until they are soft. Drain and set aside.

    Make the Sauce

    In a small bowl, mix together soy sauce, dark soy sauce, oyster sauce, and sugar until well combined. Set aside.

Cooking

    Cook the Chicken

    In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the chicken breast and stir-fry until fully cooked, about 5-7 minutes. Remove from the skillet and set aside.

    Stir-fry the Vegetables

    In the same skillet, add another tablespoon of oil. Add the broccoli florets and julienned carrots. Stir-fry for about 3-4 minutes until they are tender-crisp.

    Add the Noodles

    Add the drained noodles to the skillet with the vegetables. Pour the sauce over the noodles and toss everything together, cooking for another 2-3 minutes.

    Scramble the Eggs

    Push the noodle mixture to one side of the skillet. Crack the eggs into the empty side and scramble them until fully cooked. Then mix the eggs into the noodle and vegetable mixture.

    Add the cooked chicken back into the skillet with the noodles and toss everything together until well combined. Cook for an additional minute.

Serving

    Garnish and Serve

    Serve the Pad Se Euiy hot, garnished with fresh basil leaves and lime wedges on the side for squeezing over the dish.
