Marinate the Meat
In a bowl, combine minced garlic, white pepper, soy sauce, sesame oil, cornstarch, sugar, and salt. Mix well to create the marinade.

Add the Meat
Cut the pork or chicken into bite-sized pieces. Add to the marinade, ensuring all pieces are coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

Prepare the Green Onions
Wash and chop the green onions, setting aside the green tops for garnish.

Heat the Pan
In a large skillet or wok, heat a tablespoon of oil over medium-high heat.

Cook the Meat
Add the marinated pork or chicken to the hot pan, spreading it out in a single layer. Cook for 5-7 minutes, stirring occasionally, until the meat is browned and cooked through.

Add Green Onions
Once the meat is fully cooked, add the chopped green onions (white parts first) to the pan. Sauté for an additional 2-3 minutes until the onions are tender.

Adjust Heat
If you like it spicy, sprinkle chili flakes over the dish to taste and stir well to combine.

Remove from heat, garnish with the reserved green onion tops, and serve hot with rice or noodles of your choice.
