Prep the Ingredients
Slice the chicken breast into bite-sized pieces. Slice the onion and bell pepper into strips. Clean and slice the mushrooms. Drain and rinse the bamboo shoots.

Cook the Cashews
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the cashews and toast them for about 2-3 minutes, stirring occasionally until golden brown. Remove from the skillet and set aside.

Sauté the Chicken
In the same skillet, add the remaining tablespoon of vegetable oil. Once hot, add the chicken pieces. Season with salt and black pepper. Cook for about 5-7 minutes or until the chicken is no longer pink in the center.

Add Aromatics
Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.

Combine and Season
Pour in the soy sauce and add the toasted cashews. If using, add chili paste according to your heat preference. Stir everything to combine and cook for another 2-3 minutes, allowing flavors to meld.
