Prepare the Potatoes
Wash and peel the Russet potatoes, then cut them into fries or wedges.

Soak the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain and pat dry the soaked potatoes. Carefully add them to the hot oil in batches, frying until golden brown, about 5-6 minutes per batch.

Drain and Season
Once cooked, remove the fries from the oil and drain on paper towels. While still hot, drizzle with white truffle oil and sprinkle with salt.

Serve with Parmesan
Transfer the fries to a serving platter, top with freshly shaved Parmesan cheese, and serve immediately.
