Filet Mignon and Accompaniments

Method

Preparation and Cooking

  1. 1

    Prepare the Broccolini

Preheat the grill or a grill pan on medium-high heat. Toss the broccolini with olive oil, salt, and pepper. Grill for about 3-4 minutes until charred and tender. Set aside.

  2. 2

    Cook the Filet Mignon

Season the filet mignon steaks with salt and black pepper. In a hot skillet or grill, cook the steaks for about 4-5 minutes on each side for medium-rare, or until desired doneness. Let rest for a few minutes.

  3. 3

    Make the Au Poivre Sauce

In the same skillet used for the steaks, add a bit of olive oil if needed and sauté crushed black peppercorns for 1-2 minutes. Add a splash of cream and reduce until thickened. Stir in the citrus zests and adjust seasoning with salt.

  4. 4

    Plating

On a plate, place the charred broccolini beside the filet mignon. Drizzle the au poivre sauce over the steak and serve.
