    Prepare the Chimichurri

    In a food processor, combine the parsley, garlic, red wine vinegar, red pepper flakes, olive oil, salt, and black pepper. Blend until smooth. Adjust seasoning to taste.

    Cook the Steak

    Season the Roseda Farms Filets with olive oil, salt, and black pepper. Heat a skillet over medium-high heat and sear the steaks for about 4-5 minutes per side for medium-rare, or until your desired doneness. Let them rest for a few minutes before slicing.

    Prepare the Fries

    Cut the potatoes into fries and soak them in cold water for at least 30 minutes. Drain and pat dry. Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, season with salt.

    Prepare the Frisée Salad

    In a bowl, toss the frisée lettuce with lemon juice, olive oil, and a pinch of salt.
