    Prepare the Rack of Lamb

    Preheat your oven to 400°F (200°C). Season the rack of lamb with salt, black pepper, and sumac. Rub the olive oil over the meat to coat evenly.

    Roast the Lamb

    Place the rack of lamb bone-side down on a roasting pan. Roast in the preheated oven for 20-25 minutes for medium-rare, or until a meat thermometer reads 130°F (54°C).

    Prepare the Carrots

    While the lamb is roasting, wash and trim the baby carrots. In a small pot, bring water to a boil and blanch the carrots for 3-4 minutes until tender. Drain and set aside.

    Make the Port Wine Reduction

    In a saucepan, combine the port wine and chicken stock. Bring to a simmer over medium heat and reduce by half, about 10 minutes. Remove from heat and whisk in the butter until smooth.

    Serve

    Once the lamb is cooked to your liking, remove it from the oven and let it rest for 5-10 minutes. Slice the rack into chops, plate with baby carrots, and drizzle the port wine reduction over the top.
