    Prep the Ribs

    Preheat the oven to 300°F (150°C). Season the short ribs generously with salt and pepper.

    Sear the Ribs

    In a large Dutch oven, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove and set aside.

    Sauté Vegetables

    In the same pot, add chopped onions and carrots. Sauté until soft, about 5 minutes. Add minced garlic and cook for another minute.

    Deglaze the Pot

    Pour in the red wine, scraping up any browned bits from the bottom of the pot. Let it simmer for about 5 minutes.

    Add Broth and Herbs

    Add the beef broth, thyme, and bay leaves to the pot. Return the short ribs to the pot, ensuring they are mostly submerged.

    Braise the Ribs

    Cover the pot and transfer it to the preheated oven. Braise for about 3 hours, or until the meat is tender and falls off the bone.

    Rest and Serve

    Remove the short ribs from the oven and let them rest for 15 minutes before serving. Reserve the liquid for pan jus.
