Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thick fries, approximately 1/4 inch wide.

Soak the Fries
Place the cut fries in a bowl of cold water for at least 30 minutes to remove excess starch.

Dry the Fries
Drain the fries and pat them dry with a clean kitchen towel to remove as much moisture as possible.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the fries in batches, frying them for 5-7 minutes or until golden brown and crispy.

Drain and Season
Remove the fries from the oil and place them on a paper towel-lined plate to drain. Immediately sprinkle with sea salt for classic fries or toss with truffle oil and Parmesan cheese for truffle fries.

Serve
Serve the fries hot, accompanied by your favorite dipping sauces.
