Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch wide.

Soak the Potatoes
Place the cut potatoes in a large bowl of cold water and soak for at least 30 minutes to remove excess starch. Drain and pat dry with paper towels.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add a batch of the soaked and dried potato strips to the hot oil. Fry for about 5-7 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Season the Fries
While the fries are still hot, sprinkle them generously with flake sea salt to taste.

Serve immediately while hot and crispy.
