Dry ingredients

In a large mixing bowl whisk together 1.5 cups all-purpose flour, 2 tablespoons granulated sugar, 2 teaspoons baking powder, and 1 teaspoon fine sea salt until evenly combined.

Wet ingredients

In a separate medium bowl whisk 1.25 cups milk, 1 large egg, 3 tablespoons melted unsalted butter, and 1 teaspoon vanilla extract until smooth.

Combine batter

Make a well in the dry ingredients and pour the wet mixture in. Stir gently with a spatula or wooden spoon just until combined — small lumps are fine. Do not overmix. Let the batter rest 5 minutes while you heat the pan; it will thicken slightly.

Cook Pancakes

Heat a nonstick skillet or griddle over medium heat. Brush with a little melted butter or oil (about 1 teaspoon). When hot, lower heat to medium-low for even browning. For each pancake, pour about 1/4 cup batter onto the skillet, spacing them comfortably. If desired, sprinkle a few mixed berries onto each pancake immediately.

Cook until bubbles form across the surface and the edges look set, 2 to 3 minutes. Flip gently and cook the second side until golden and cooked through, another 1 to 2 minutes. Transfer cooked pancakes to a warm plate and cover loosely with foil; repeat with remaining batter, adding butter to the pan as needed.

Keep pancakes warm in a low oven (90–100°C / 200°F) if making a large batch.

Sweet Toppings & Assembly

Warm maple syrup in a small saucepan over low heat, or microwave for 20–30 seconds until warm but not boiling (use 0.75 cups).

If using ricotta or mascarpone (0.5 cups), loosen it with 1 to 2 teaspoons of warm maple syrup or milk to a spreadable consistency. Taste and add a pinch of powdered sugar if desired.

On each serving plate stack 3 pancakes. Top with sliced banana, a handful of mixed berries (from 1 cup), a spoonful of ricotta/mascarpone if using, and a drizzle of warm maple syrup. Sprinkle with 1 tablespoon powdered sugar, toasted nuts (0.25 cups) if using, and a light pinch (about 1/4 tsp) of flaky sea salt to enhance sweetness.

Finish with a small pat (about 1 tablespoon) of unsalted butter melted over the stack for shine and richness.

Serve

Serve immediately while pancakes are warm. Provide extra maple syrup at the table. Leftover pancakes can be cooled, wrapped, and refrigerated for up to 2 days or frozen for up to 1 month; reheat in a toaster or oven.
