Classic Lobster Roll
Prepare lobster mixture
In a medium bowl gently combine the cooked lobster meat, mayonnaise, lemon juice, finely diced celery, minced chives, and Dijon mustard. Fold carefully so lobster chunks remain intact. Season with 1/2 teaspoon salt and 1/4 teaspoon freshly ground black pepper. Taste and adjust lemon, salt or mayo as desired. Chill in refrigerator for at least 15 minutes while you prepare rolls and salad.

Make the dressing
In a small jar or bowl whisk together 3 tablespoons extra-virgin olive oil, 2 tablespoons apple cider vinegar, 1 teaspoon honey, 1/2 teaspoon Dijon mustard, 1/4 teaspoon salt and 1/8 teaspoon black pepper until emulsified. Taste and adjust sweetness or acidity as needed.
Assemble salad
In a large bowl combine 4 cups baby spinach, 1 cup fresh blueberries, 1/4 cup thinly sliced red onion, 1/2 cup toasted walnuts and 1/2 cup crumbled goat cheese. Drizzle dressing over salad and toss gently just before serving so spinach stays bright. Garnish with extra blueberries or walnuts if desired.
Blueberry Muffins (side or dessert)
Preheat and prepare pan
Preheat oven to 400°F (200°C). Line a 12-cup muffin tin with liners or lightly grease 8–10 cups if you prefer larger muffins.
Make batter
In a large bowl whisk together 2 cups all-purpose flour, 3/4 cup granulated sugar, 2 teaspoons baking powder and 1/2 teaspoon salt. In a separate bowl whisk the egg, 3/4 cup milk, 1/4 cup melted cooled butter and 1 teaspoon vanilla until combined. Pour wet ingredients into the dry ingredients and stir gently until just combined — batter should be slightly lumpy. Fold in 1 cup fresh blueberries carefully to avoid crushing.
Bake
Divide batter among the prepared muffin cups (about 3/4 full). Sprinkle tops with coarse sugar if using. Bake at 400°F (200°C) for 18–22 minutes, or until tops are golden and a toothpick inserted into the center comes out clean. Cool in the pan 5 minutes, then transfer to a wire rack to cool completely.
Condiments & Garnishes
Place lemon wedges and extra herbs on a small plate. Offer salt and pepper at the table for guests to season the lobster rolls or salad to taste.
