    Begin by pressing the soft tofu to remove excess moisture. Cut the tofu into cubes and set aside. Prepare all the vegetables by slicing, dicing, or chopping as necessary.

    In a large skillet or wok, heat a tablespoon of oil over medium heat. Add the sliced onions and ginger, sautéing for about 2 minutes until fragrant. Add the mushrooms, bell pepper, and baby corn, cooking for an additional 3 minutes.

    Add the Tofu and Sauce

    Gently add the tofu cubes to the skillet. Pour in the sweet and sour tamarind sauce (store-bought or homemade) and stir everything together. Cook for another 5 minutes, allowing the sauce to coat the tofu and vegetables.

    Finish with Pineapple and Snow Peas

    Add the diced pineapple, snow peas, and green peas. Stir gently and cook for another 2-3 minutes until the peas are tender but still bright green.
