Prepare the Tofu
Drain the soft tofu and gently press it between paper towels to remove excess moisture. Cut into cubes.

Sauté the Vegetables
In a large skillet or wok, heat 2 tablespoons of oil over medium heat. Add the onions, ginger, and bell pepper; sauté for 3-4 minutes until the onions become translucent.

Cook the Tofu
Gently fold in the tofu cubes and cook for an additional 3-4 minutes, allowing the tofu to warm through.

Prepare the Tamarind Sauce
In a bowl, mix 2 tablespoons of tamarind paste, 2 tablespoons of soy sauce, and 1 tablespoon of sugar. Pour this sauce over the sautéed mixture and stir gently to coat.

Serve
Cook everything together for another 2 minutes. Garnish with chopped scallions before serving. Enjoy your Tamarind Tofu!
