Prepare crab and roux

Wipe the white crab meat of any shell fragments and set aside. Finely flake larger pieces so the final texture is smooth but still has visible crab.

In a medium heavy-bottomed saucepan, melt the unsalted butter over medium heat until foaming but not browned.

Add the plain flour to the melted butter and stir continuously with a wooden spoon to form a smooth roux. Cook for 1–2 minutes to remove raw flour taste, taking care not to let it colour.

Gradually whisk in the whole milk in two or three additions to avoid lumps, then add the double cream. Keep whisking until you have a smooth, thick béchamel. Cook for 3–4 minutes until it coats the back of a spoon.

Enrich and season

Temper the egg yolks by whisking a small ladle of the hot béchamel into the yolks, then return the yolk mixture to the pan while stirring constantly. Stir in Dijon mustard, lemon zest, chives, sea salt and white pepper. Taste and adjust seasoning as needed.

Remove the pan from the heat and fold in the flaked white crab meat gently to keep lumps. Let the mixture cool to room temperature, then cover tightly with cling film pressed onto the surface to prevent a skin forming. Chill in the fridge for at least 2 hours (preferably 3) until firm enough to shape.

Breading & Frying

Set up a breading station: one shallow bowl with the 80 g plain flour, one bowl with the beaten eggs, and one tray with the breadcrumbs. Season the breadcrumbs lightly with a pinch of salt and pepper.

When the croquette mixture is chilled and firm, use a spoon or ice cream scoop to portion into 12 even portions (approximately 30 g–35 g each) and shape each into small cylinders or ovals using lightly floured hands.

Working one at a time, dredge each shaped croquette in flour, tapping off excess, dip into beaten egg, then roll thoroughly in breadcrumbs to coat. For an extra-crisp shell, double dip: return to the egg and breadcrumbs for a second coating.

Heat the vegetable oil in a deep saucepan or deep-fryer to 175°C (350°F). If you don't have a thermometer, test with a cube of bread — it should brown in about 30–35 seconds. Use enough oil to allow the croquettes to float and turn freely.

Fry the croquettes in small batches (do not overcrowd) for 2½–3½ minutes until golden brown, turning once so they cook evenly. Use a slotted spoon to transfer to a wire rack or paper towel-lined tray to drain. Keep croquettes warm in a low oven (90–100°C / 200–210°F) while finishing remaining batches.

If using an extra egg for a richer mayonnaise, very briefly blitz the half egg with the mayonnaise to achieve a smooth emulsion (optional). Otherwise, simply combine the mayonnaise and half egg (if used) in a bowl.

Gently fold in the finely chopped cooked brown crab meat (note: may contain shell), lemon juice, chopped capers, minced shallot, hot sauce (if using), salt and black pepper. Taste and adjust lemon, salt or hot sauce to balance. Chill for at least 30 minutes to allow flavors to meld.

Before serving, give the mayo a final stir and check for any shell fragments. Keep diners informed the condiment may contain shell pieces as noted on the menu.

To Serve

Arrange 3 croquettes per starter plate. Spoon a tablespoon of the chilled brown crab mayo beside or underneath each croquette, garnish with micro herbs or chopped parsley and a lemon wedge. Serve immediately while croquettes are hot and crisp.

Provide a short allergen/shellfish warning on the plate or menu note that the brown crab mayo may contain shell fragments.
