Base omelette

    Whisk eggs

    Crack 3 large eggs into a medium bowl. Add 2 tablespoons whole milk, 1 teaspoon salt, and 1/4 teaspoon black pepper. Whisk vigorously until fully combined and slightly frothy (about 20–30 seconds). This yields a tender omelette.

    Preheat pan

    Place an 8–10 inch nonstick skillet over medium-low heat. Add 1/2 teaspoon neutral oil and 1 tablespoon unsalted butter. Allow butter to melt and foam but not brown; this should take about 1–2 minutes. The pan should be hot enough that a drop of water sizzles gently.

    Cook omelette

    Pour the whisked eggs into the skillet. Let the eggs set undisturbed for about 10–15 seconds, then use a silicone spatula to gently push the set edges toward the center while tilting the pan to allow uncooked egg to flow to the edges. Continue until the surface is mostly set but still slightly glossy on top (about 45–60 seconds total).

    Prepare to fill

    When the eggs are almost set but still moist on top, reduce heat to low. Leave a thin layer of cooked egg under to fold over fillings.

    Add cheese

    Sprinkle 1/2 cup shredded sharp cheddar evenly over one half of the omelette. Optionally add 1 tablespoon grated Parmesan for a savory boost.

    Fold and finish

    Using the spatula, fold the empty half of the omelette over the cheese side to form a crescent. Let cook 30–45 seconds more to melt the cheese, then slide the omelette onto a plate, garnish with chopped chives or parsley if using, and serve immediately.

    Cook sausage

    Heat 1 teaspoon olive oil in a small skillet over medium heat. Remove sausage meat from 2 links (or slice if precooked) and crumble or thin-slice. Add 2 tablespoons of the crumbled/sliced sausage and 1 finely diced shallot to the pan. Sauté 2–3 minutes until shallot is soft and sausage is heated through and slightly browned. Add 1 tablespoon chopped fresh sage and cook 30 seconds more. Transfer filling to a small plate.

    Assemble in omelette

    When the omelette base is almost set, distribute the sausage-shallot-sage mixture over one half. Optionally add a small sprinkle (2–3 tablespoons) of shredded cheese for extra creaminess. Fold the omelette over the filling, cook 30–45 seconds to heat through, then serve.

Candied bacon omelette filling

    Candy the bacon

    Preheat oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top. Lay 4 slices thick-cut bacon on the rack. Sprinkle 2 tablespoons brown sugar evenly over the bacon and grind 1/4 teaspoon black pepper on top. Bake for 12–16 minutes, watching closely, until sugar is caramelized and bacon is crisp but not burnt. Remove and transfer to paper towels to drain and cool slightly; chop into bite-size pieces.

    Add to omelette

    Scatter the chopped candied bacon over one half of the almost-set omelette. Optionally add a small handful (2–3 tablespoons) of shredded cheese to balance sweetness with savory. Fold the omelette over the filling, warm 30–45 seconds, then plate and garnish with chives if desired.

    Garnish the plated omelette with 1 tablespoon chopped chives or parsley and serve with 1 teaspoon hot sauce or salsa on the side if desired.
