Hot Fried Chicken

    Marinate

    Pat chicken thighs dry. In a large bowl, whisk together buttermilk and 2 tablespoons hot sauce. Submerge the thighs in the buttermilk mixture, cover, and refrigerate for at least 1 hour (or up to 6 hours) to tenderize and infuse flavor.

    Prepare Coating

    In a shallow bowl or wide dish, combine 1 1/2 cups all-purpose flour, 1/4 cup cornstarch, 1 tsp smoked paprika, 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp cayenne, 1.5 tsp kosher salt, and 1 tsp black pepper. Mix thoroughly.

    Heat Oil

    Pour about 1 liter (or enough) vegetable oil into a heavy skillet or Dutch oven to reach a depth of 1 to 1.5 inches. Heat the oil over medium-high heat to 350°F (175°C). If you don't have a thermometer, test by dropping a pinch of flour: it should sizzle immediately but not burn.

    Dredge & Fry

    Remove each thigh from the buttermilk, allowing excess to drip off. Dredge thoroughly in the seasoned flour mixture, pressing to adhere a thick crust. Shake off excess and set on a rack. Fry 2 thighs at a time (do not overcrowd) for 10–12 minutes, turning once halfway, until crust is deep golden brown and internal temperature reaches 165°F (74°C). Transfer to a wire rack set over a baking sheet to rest and keep crisp while you finish remaining thighs.

    Finish

    If thighs brown before fully cooking, finish in a 350°F (175°C) oven for 5–8 minutes. Keep warm until assembly.

Breakfast Potatoes

    Prep Potatoes

    Wash and peel (optional) the russet potatoes. Cut into 1/2-inch cubes. Pat dry with a towel to remove surface moisture so they crisp better.

    Cook Potatoes

    Heat 2 tablespoons olive oil in a large nonstick or cast-iron skillet over medium-high heat. Add diced potatoes in a single layer (work in batches if necessary). Cook undisturbed for 4–5 minutes until the underside is golden brown, then stir or flip pieces to brown other sides, about 10–12 minutes total.

    Add Aromatics & Seasoning

    When potatoes are nearly tender, add the diced half onion and 2 minced garlic cloves. Sprinkle 1/2 tsp smoked paprika, 1/2 tsp dried thyme, 1 tsp kosher salt, and black pepper to taste. Continue cooking and tossing until onions are translucent and potatoes are crisp-tender, about 3–4 more minutes. Remove from heat and keep warm.

Cheese Sauce

    Make Roux

    In a small saucepan over medium heat, melt 2 tablespoons unsalted butter. Whisk in 2 tablespoons flour and cook for 1 minute, stirring, to remove the raw flour taste.

    Finish Sauce

    Gradually whisk in 1 cup whole milk, smoothing lumps, and simmer gently until slightly thickened, about 2–3 minutes. Lower heat and whisk in 1 cup grated sharp cheddar and 2 tablespoons softened cream cheese until smooth. Stir in 1 teaspoon Dijon mustard, 1/2 teaspoon hot sauce (optional), 1/2 tsp salt, and 1/4 tsp black pepper. Keep sauce warm over very low heat; if it thickens too much, thin with a splash of milk.

Eggs & Toppings

    Cook Bacon

    In a skillet over medium heat, lay 6 bacon slices and cook until crisp, turning occasionally, about 8–10 minutes. Transfer to paper towels to drain, then chop or crumble. Reserve 1 tablespoon bacon fat for eggs if desired.

    Make Hot Honey (Optional Quick Version)

    In a small saucepan, combine 1/4 cup hot honey and 1 teaspoon apple cider vinegar. Warm gently over low heat until runny and combined, about 1–2 minutes. Remove from heat and set aside. (If you like it spicier, stir in a pinch of cayenne or 1/2 teaspoon crushed red pepper flakes.)

    Sunny-Side Up Eggs

    Heat a nonstick skillet over low-medium heat and add a teaspoon of butter or reserved bacon fat. Crack 4 large eggs into the pan, spacing them apart. Cook covered for 2–3 minutes until whites are set but yolks remain runny (cook longer for firmer yolks). Season each egg with a pinch of salt and 1/4 tsp black pepper. Remove from heat.

Assembly & Garnish

    Divide the breakfast potatoes between 4 shallow bowls as the base.

    Place one hot fried chicken thigh on top of the potatoes in each bowl. If the thighs are large, halve them so they sit comfortably.

    Nestle one sunny-side up egg beside or atop each thigh.

    Ladle generous spoonfuls of warm cheese sauce over the potatoes and around the chicken. Sprinkle 1–2 tablespoons crumbled bacon over each bowl.

    Drizzle 1 tablespoon hot honey over each bowl (adjust to taste). Scatter an extra 2 tablespoons shredded cheddar over each bowl if using for added cheesiness.

    Finish with a sprinkle of chopped chives and parsley. Serve immediately while hot and the chicken remains crisp.
