Form patties
Divide the ground chuck into two equal portions (about 8 ounces each). Gently shape each portion into a 3.5–4 inch patty about 3/4 inch thick, making a shallow dimple in the center of each patty with your thumb (this prevents excessive doming during cooking). Season both sides with kosher salt and freshly ground black pepper.
Cook Patties

Heat a heavy skillet, cast-iron griddle, or flat-top over medium-high heat until very hot (about 3–5 minutes). Add 1 tablespoon vegetable oil and spread to coat. Place patties on the hot surface and cook undisturbed for 3 minutes to develop a crust.

Using a spatula, press each patty down firmly (this is the 'press' technique to get a thin, crispy edge). Continue cooking for another 1–2 minutes. Flip the patties and immediately place one slice of smoked provolone on each patty. On one patty also place the American cheese slice (so that burger ends up with both cheeses stacked). Cook another 1–2 minutes until cheeses melt and internal temperature reaches 160°F (71°C) or desired doneness.

If you prefer a fully compressed, diner-style pressed burger, after placing cheese, place a clean spatula or press on top and hold for 15–30 seconds to meld cheese and patty.
Toast Buns & Assemble

While the patties finish, place buttered brioche cut-sides down on the hot pan for 30–45 seconds until lightly golden. Remove from heat.

Spread 1 tablespoon mayonnaise on the top bun and 1 tablespoon on the bottom bun (adjust to taste).

On the bottom bun, place the cheese-topped patty. Add the tomato slices (season lightly with 1/4 tsp salt and 1/8 tsp black pepper if using) and a few red onion rings. Add pickles if desired. Finish with the top bun mayonnaise side down.

Serve the No. 7 Press Burger hot with fries or a side salad. Let rest 1 minute before eating so juices settle.
