Burger Patties

Portion and shape patties
Divide the ground beef into two equal portions (~8 ounces / 225 g each). Gently form each portion into a loose ball, then flatten into a patty about 4 inches (10 cm) across and roughly 1/2 inch (1.25 cm) thick. Make a shallow dimple in the center of each patty with your thumb to help them cook flat.

Season
Lightly brush both sides of each patty with the vegetable oil. Season both sides evenly with kosher salt and freshly ground black pepper. If using, sprinkle 1/4 tbs Worcestershire sauce over each patty and gently pat it in.

Cook patties
Heat a cast-iron skillet or heavy skillet over medium-high heat until hot but not smoking (about 3–4 minutes). Add a thin film of oil to the pan. Place the patties in the skillet and cook undisturbed for 3 minutes to develop a crust. Flip the patties and cook another 2–3 minutes for medium doneness (adjust time ±1 minute for rarer/leaner preference). During the final 30–45 seconds of cooking, place one slice of American cheese on each patty, cover the skillet with a lid or a sheet pan to melt the cheese quickly.

Prepare and toast buns
While the patties are resting, spread about 1/2 tablespoon softened butter on the cut side of each brioche bun. Place the buns butter-side down in a separate skillet or on a griddle over medium heat. Toast until golden brown, about 1–2 minutes. Remove and set aside.

Prepare produce
Pat the lettuce dry and set one leaf on each bottom bun. Arrange two tomato slices and two red onion slices per burger. If using pickles, place two slices per burger.

Spread mayo
Spread 1 tablespoon of Duke's mayonnaise on the top half of each toast-buttered brioche bun.

Assemble the burger
Place a cheese-topped patty on each prepared bottom bun (on top of the lettuce). Add the tomato and onion on top of the patty as preferred, then crown with the mayo-spread top bun.

Rest and serve
Let the assembled burgers rest for 1 minute so juices settle. Serve immediately with optional fries or chips.
