    Prepare oysters

    If oysters are not well drained, place them on paper towels and gently pat dry. If desired, briefly soak oysters in 1/2 cup buttermilk for 10 minutes to tenderize and help coating adhere; drain and pat dry again.

    Make dry mix

    In a shallow wide bowl or rimmed plate, whisk together 1 1/2 cups all-purpose flour, 1/4 cup cornstarch, 1/2 cup fine cornmeal, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp smoked paprika, 2 tsp salt, 1 tsp black pepper, and 1/4 tsp cayenne until evenly distributed.

    Make wet mix

    In a separate shallow bowl, beat 2 eggs with 3 tablespoons whole milk and 1 teaspoon hot sauce until smooth. Season lightly with a pinch of salt and pepper.

    Heat oil

    Pour about 1 liter (or enough to fill a heavy pot 2–3 inches deep) of vegetable oil into a deep skillet, Dutch oven, or fryer. Heat oil over medium-high heat until it reaches 350°F (175°C). If you don't have a thermometer, test by dropping a pinch of flour into the oil; it should sizzle and brown within ~30 seconds.

    Dredge oysters

    Working in batches of 6–8 oysters to avoid crowding, dredge each oyster first in the dry mix, shaking off excess, then dip into the egg/milk mixture, allowing excess to drip off, and finally coat again in the dry mix for a double-crisp crust. Press gently so the coating adheres.

    Fry oysters

    Carefully lower a batch of oysters into the hot oil using a slotted spoon or spider. Fry 2–3 minutes, turning once if needed, until golden brown and crisp. Internal edges should be opaque and edges slightly firm. Do not overcrowd the pot — maintain oil temperature between 325–350°F (160–175°C); adjust heat between batches.

    Drain and hold

    Remove oysters with a slotted spoon to a wire rack set over a baking sheet or paper towels and lightly season with a pinch of salt. Keep fried oysters warm in a 200°F (95°C) oven on the wire rack while finishing remaining batches.

Mojo Aioli

    In a small bowl, combine 1/2 cup mayonnaise, 2 minced garlic cloves, 2 tablespoons fresh lime juice, 1 tablespoon extra-virgin olive oil, 1/2 teaspoon ground cumin, 2 tablespoons finely chopped cilantro, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Whisk until smooth and taste; adjust lime or salt if needed. Cover and refrigerate at least 30 minutes to let flavors marry.

Comeback Sauce

    In a separate bowl, whisk together 1/2 cup mayonnaise, 2 tablespoons ketchup, 1 teaspoon prepared horseradish, 1 teaspoon hot sauce, 1/2 teaspoon Worcestershire sauce, 1/2 teaspoon smoked paprika, 1/8 teaspoon cayenne (or to taste), 1 teaspoon pickle juice, 1 tablespoon finely chopped green onions, and 1/8 teaspoon salt until smooth. Chill for at least 15 minutes before serving.

Garnish & Serve

    Arrange warm oysters on a platter. Spoon a small ramelet each of mojo aioli and comeback sauce alongside or drizzle a little sauce across oysters as desired. Garnish with chopped parsley or chives, optional pickled jalapeño slices, and lemon wedges for squeezing.

    Serve immediately while oysters are hot and crisp. Leftover sauces can be refrigerated for up to 4 days; fried oysters are best eaten the day of cooking.
