Prepare components

Cook bacon
Cook the bacon until crisp. You can fry in a skillet over medium heat (8–10 minutes) or bake on a rimmed sheet at 400°F (200°C) for 15–20 minutes until crisp. Transfer to a plate lined with paper towels to drain. Keep warm or refrigerate briefly if making ahead.

Make pimento cheese (if not using store-bought)
In a bowl, combine 1 1/2 cups shredded sharp cheddar, 1/2 cup cream cheese (softened), 2–3 tablespoons mayonnaise, 2 tablespoons drained chopped pimentos, 1/4 tsp garlic powder, 1/4 tsp onion powder, and a pinch of cayenne. Mix until smooth and adjust seasoning to taste. Chill until assembling.

Prep tomatoes
Slice each green tomato into 1/2-inch thick rounds. You should get about 3–4 slices per medium tomato. Lay slices on a tray, sprinkle both sides lightly with the kosher salt and black pepper, and let rest 5 minutes to draw out minimal moisture. Pat dry with paper towel.

Set up dredging station
Place the flour in a shallow bowl or plate. In a second bowl, whisk the eggs with 1 tablespoon milk until combined. In a third shallow bowl, mix the cornmeal, smoked paprika, cayenne, and a pinch of salt and pepper.

Fry tomatoes
Fry the breaded tomato slices in batches without crowding for 2–3 minutes per side, until golden brown and crisp. Use tongs to flip gently. Transfer fried slices to a paper-towel-lined plate and season immediately with a light pinch of salt. If the oil darkens or gets too hot, lower the heat. Keep warm in a 200°F (95°C) oven on a tray if necessary.
Assemble and finish sandwiches

Build sandwich
On four bread slices (butter side down), spread about 3 tablespoons pimento cheese on each. Top each with 2–3 fried green tomato slices (depending on size), then arrange 3 slices of bacon over the tomatoes, and add 2 leaves of lettuce. If using, add pickles and a few drops of hot sauce to taste. Top with the remaining bread slices, butter side up.

Serve
Press sandwiches lightly and slice in half. Serve immediately while tomatoes are warm and bread is crisp. Makes 4 sandwiches.
