Pimento Comeback Cheese

Make the comeback
In a medium bowl, beat the softened cream cheese until smooth. Stir in mayonnaise until combined and slightly loose. Fold in chopped roasted red pimentos, pickled jalapeño, prepared horseradish, Worcestershire sauce, sherry vinegar, smoked paprika, cayenne, and chopped chives. Season with 1/2 tsp kosher salt and 1/4 tsp black pepper, taste and adjust. Chill in the refrigerator for at least 30 minutes to let flavors meld.

Crisp the bacon
Preheat oven to 400°F (200°C). Lay bacon strips on a rimmed baking sheet lined with foil or parchment. Bake 12–18 minutes until crisp but not brittle. Remove and place on paper towels to drain, then chop each strip into 1/2–1 inch pieces. Reserve on a plate.

Prepare breading
Set up three shallow bowls: 1) flour mixed with cornstarch, 2) egg wash — beat eggs with milk and hot sauce, 3) panko mixed with cornmeal, smoked paprika, garlic powder, and 1 tsp fine salt. Keep bowls in order for easy dredging.

Season oysters
Pat oysters dry with paper towels. Lightly season both sides with 1 tsp kosher salt and 1/2 tsp black pepper (total quantities listed in ingredients).

Dredge oysters
Working in batches of 3–4, dredge each oyster in the flour-cornstarch mixture, shake off excess, dip into the egg wash, then press firmly into the panko-cornmeal mixture to coat. Set breaded oysters on a wire rack and let rest 5–10 minutes so the coating adheres.
Frying & Assembly

Heat oil
Pour 1½–2 cups neutral frying oil into a heavy skillet (cast iron or stainless) to a depth of about 1/2 inch. Heat over medium-high until oil registers 350°F (175°C) on a thermometer or a pinch of breadcrumb sizzles and browns in about 15–20 seconds.

Fry oysters
Fry breaded oysters in batches—do not overcrowd—3–4 at a time for 1.5–2.5 minutes per side, flipping once, until golden brown and crisp. Adjust heat to maintain 325–350°F. Use a slotted spatula to transfer cooked oysters to a paper towel–lined tray to drain. Keep warm on a low oven (200°F / 95°C) if needed.

Plate and top
Place 3 fried oysters per serving on a small plate. Spoon a generous dollop (about 1 tbsp) of chilled pimento comeback cheese onto each oyster or to the side for dipping. Sprinkle reserved chopped bacon pieces over the oysters and sauce. Garnish with microgreens or chopped parsley and a lemon wedge. If desired, finish with a light drizzle (1/2 tsp) of creole mustard or hot honey.

Serve immediately while oysters are hot and crisp. Recommend serving with extra comeback sauce on the side and lemon wedges. Leftover comeback cheese keeps refrigerated for up to 3 days; leftover fried oysters are best enjoyed the day of preparation.
