Preparation of Fries

    Cut the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips, approximately 1/4 inch wide.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel to remove as much moisture as possible.

Frying the Fries

    Heat the Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Carefully add the dried potato strips to the hot oil in batches, making sure not to overcrowd the pan. Fry them for about 5-7 minutes until golden brown and crispy.

    Use a slotted spoon to remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. Immediately sprinkle with salt.

    Once all the fries are fried and drained, drizzle the truffle oil over the hot fries. Sprinkle the grated Parmesan cheese, chopped fresh parsley, and black pepper evenly over the top.
