Roasting Carrots and Garlic

Preheat Oven

Preheat your oven to 400°F (200°C).

Prepare Carrots

Wash and peel the carrots, then cut them into roughly 1-inch pieces.

Roast Carrots and Garlic

Spread the carrot pieces and whole garlic cloves on a baking sheet. Drizzle with olive oil and sprinkle with salt. Toss to coat. Roast in the preheated oven for 25-30 minutes, until the carrots are tender and slightly caramelized. Remove from oven and let cool slightly.

Making Hummus

Blend Ingredients

In a food processor, combine the roasted carrots and garlic, tahini, lemon juice, cumin, and salt. Blend until smooth.

Add Chickpeas and Water

Add the drained chickpeas and water to the mixture. Blend again until creamy. You may need to add more water to reach the desired consistency.

Drizzle Olive Oil

With the food processor running, drizzle in the olive oil until fully incorporated.

Preheat Grill

Preheat a grill or grill pan over medium-high heat.

Prepare Vegetables

Slice the zucchini and bell pepper into strips. Toss them with olive oil, salt, and pepper.

Grill Pita and Vegetables

Place the pita bread and vegetables on the grill. Grill the pita for about 1-2 minutes on each side until warm and slightly charred. Grill the vegetables until tender and slightly charred, about 3-4 minutes.
