In a medium saucepan, bring 4 cups of water to a boil over high heat. Add 1 cup of steel-cut oats and 1 tsp of salt to the boiling water.

Reduce the heat to low and let the oats simmer uncovered for about 20-30 minutes, stirring occasionally. Cook until the oats are tender and have absorbed most of the water.

Once cooked, remove the saucepan from the heat and let it sit for 5 minutes, covered, to thicken.
