Spinach Dip

Prepare the Spinach
In a large pot, bring water to a boil. Add the fresh spinach and blanch for about 2 minutes until wilted. Drain and rinse with cold water to stop the cooking process. Squeeze out excess moisture and chop the spinach finely.

Mix the Dip
In a large mixing bowl, combine the cream cheese, sour cream, mayonnaise, minced garlic, parmesan cheese, salt, black pepper, red pepper flakes, and dried thyme. Mix until smooth and creamy.

Incorporate Spinach
Fold in the chopped spinach into the cream mixture until evenly distributed. Adjust seasoning to taste.

Chill
Cover the dip and refrigerate for at least 30 minutes to allow the flavors to meld together.
Garlic and Herb Crostini

Prepare the Baguette
Preheat your oven to 400°F (200°C). Slice the baguette into 1/2 inch thick slices.

Make the Garlic Oil
In a small saucepan, heat the olive oil over low heat. Add the minced garlic and dried oregano, cooking for about 2-3 minutes until fragrant. Remove from heat and let it cool slightly.

Brush and Bake
Arrange the baguette slices on a baking sheet. Brush each slice generously with the garlic oil and sprinkle with salt. Bake in the preheated oven for about 10-12 minutes or until golden brown and crispy.

Remove from oven and let cool slightly before serving with the chilled spinach dip.
