Prepare the Simple Syrup
In a medium saucepan, combine water and granulated sugar. Heat over medium heat, stirring occasionally until the sugar is completely dissolved. Remove from heat and let cool.

Once the simple syrup has cooled, stir in the lemon juice. This mixture will serve as the base for all sorbet flavors.

Prepare Strawberry Sorbet
In a blender, puree 2 cups of fresh strawberries until smooth. Combine the strawberry puree with 1/3 of the lemon-sugar base mixture. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer to a container and freeze for at least 2 hours.

Prepare Mango Sorbet
In a blender, puree 2 cups of fresh mango until smooth. Combine the mango puree with 1/3 of the lemon-sugar base mixture.
