Romesco Sauce

Prepare the Romesco Sauce
In a blender or food processor, combine the roasted red bell peppers, toasted almonds, garlic cloves, diced tomato, red wine vinegar, olive oil, smoked paprika, salt, and black pepper. Blend until smooth and creamy. Adjust seasoning to taste.

Cook the Salmon
Preheat your grill or oven to 375°F (190°C). Drizzle olive oil over the salmon fillets, then season with salt and black pepper. Place the salmon on the grill or a baking tray and cook for about 12-15 minutes, or until the salmon flakes easily with a fork.
Wild Rice

Prepare the Wild Rice
In a medium saucepan, bring 3 cups of water to a boil. Add the wild rice and salt. Reduce the heat to low, cover, and simmer for about 45-50 minutes or until the rice is tender and has split open. Drain any excess water if necessary.
