Hummus Preparation

Roast Carrots and Garlic
Preheat the oven to 400°F (200°C). Peel and cut the carrots into halves. Place them on a baking sheet along with the unpeeled garlic cloves. Drizzle with olive oil, and sprinkle with salt. Roast in the oven for 25-30 minutes or until the carrots are tender and slightly caramelized.

Blend the Hummus
Once the carrots and garlic are done roasting, allow them to cool slightly. Squeeze the roasted garlic out of its skin and place it in a food processor. Add the roasted carrots, tahini, lemon juice, olive oil, ground cumin, and salt. Blend until smooth. If the hummus is too thick, add water one tablespoon at a time until the desired consistency is reached. Adjust seasoning with more salt, lemon juice, or cumin if needed.

Season and Serve
Transfer the hummus to a serving bowl, drizzle with olive oil, and sprinkle paprika on top for garnish. Set aside while you prepare the pita and vegetables.

Grill the Pita
Preheat a grill or grill pan over medium heat. Place the pita bread on the grill and cook for 1-2 minutes on each side until warm and slightly charred.

Serve
Arrange the grilled pita and fresh vegetables on a serving platter alongside the roasted carrot and garlic hummus. Enjoy as a dip or spread!
