Method

Poaching the Pears

    Prepare the Poaching Liquid

    In a large saucepan, combine Burgundy wine, sugar, water, and a cinnamon stick. Bring to a simmer over medium heat, stirring until the sugar has dissolved.

    Poach the Pears

    Peel the pears and leave the stems intact. Carefully place the pears in the simmering poaching liquid. Cover and simmer for 15-20 minutes or until the pears are tender but not mushy.

    Cool the Pears

    Remove the pears from the poaching liquid and let them cool completely. Once cooled, slice them into quarters or slices for serving.

Making the Vinaigrette

    Combine Ingredients

    In a small bowl, whisk together the Riesling wine vinegar, olive oil, honey, salt, and black pepper until well combined.

Assembling the Salad

    In a large salad bowl, add the spring mix greens, candied pecans, and currants.
