Method

Poaching the Pears

    Prepare the Poaching Liquid

    In a medium saucepan, combine the Burgundy wine, water, sugar, cinnamon stick, and vanilla extract. Bring the mixture to a simmer over medium heat.

    Poach the Pears

    Once the poaching liquid is simmering, add the peeled and halved pears. Reduce the heat to low and let the pears poach gently for about 15-20 minutes or until tender. Remove the pears from the liquid and let them cool.

Candied Pecans

    Prepare the Pecans

    In a skillet over medium heat, melt the butter. Add the pecans, brown sugar, and salt. Stir to combine.

    Candy the Pecans

    Continue to cook while stirring frequently for about 5-7 minutes, until the pecans are golden and caramelized. Remove from heat and let them cool on parchment paper.

Salad Assembly

    Make the Vinaigrette

    In a small bowl, whisk together the Riesling wine vinegar, olive oil, salt, and pepper until well combined.

    Assemble the Salad

    In a large bowl, toss the spring mix salad greens with the currants. Slice the poached pears and arrange them on top of the salad. Sprinkle the candied pecans over the top.
