Preparing the Marinade

    Make the Marinade

    In a bowl, whisk together the balsamic vinegar, olive oil, minced garlic, salt, and black pepper.

Marinating the Mushrooms

    Marinate the Portobello Mushrooms

    Place the portobello mushrooms in a shallow dish and pour the marinade over them. Let them marinate for at least 30 minutes, turning occasionally.

Grilling the Vegetables

    Prepare the Red Peppers

    While the mushrooms are marinating, preheat the grill. Cut the red bell peppers in half and remove the seeds. Grill them cut-side down for about 5-7 minutes until charred and tender.

    Grill the Mushrooms

    Once the mushrooms have marinated, grill them for about 5-6 minutes on each side until they are tender and have grill marks.

Assembling the Burger

    Assemble the Burger

    Toast the burger buns lightly on the grill. On the bottom half of each bun, place a grilled portobello mushroom, top with grilled red pepper halves, a handful of arugula, and crumble goat cheese on top. Finish with the top half of the bun.
