For the Poached Eggs

    Prepare the Water

    Fill a medium saucepan with water and add white vinegar and salt. Bring it to a gentle simmer over medium heat.

    Poach the Eggs

    Crack each egg into a small bowl. Gently slide the eggs into the simmering water, one at a time. Poach for about 3-4 minutes until the whites are set but the yolks remain runny.

    Remove Eggs

    Use a slotted spoon to carefully remove the poached eggs from the water. Place them on a paper towel to drain excess water.

For the Honey Ham

    Prepare the Ham

    While the eggs are poaching, heat a skillet over medium heat. Add the shaved honey ham slices and cook for about 1-2 minutes on each side until warmed through.

For the Chive-Lemon Hollandaise

    Melt the Butter

    In a small saucepan, melt the unsalted butter over low heat until fully melted. Remove from heat and keep warm.

    Whisk the Egg Yolks

    In a stainless steel or glass bowl, whisk together the egg yolks and fresh lemon juice until the mixture is pale and slightly thickened.

    Combine and Whisk

    Place the bowl over a pot of simmering water (double boiler). Continue whisking while slowly drizzling in the melted butter until the sauce thickens and becomes creamy.

    Add Chives and Season

    Remove from heat and stir in the chopped chives. Season with salt and black pepper to taste. Keep warm until ready to serve.

For the Toasted Muffin

    Toast the Muffins

    Slice the English muffins in half and toast them until golden brown. This can be done in a toaster or under the broiler.
