Method
Artisanal Breads
- 1
Prepare the Dough
In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 10 minutes until frothy.
- 2
Mix Ingredients
Add the all-purpose flour, whole wheat flour, salt, and olive oil to the yeast mixture. Stir until a dough forms.
- 3
Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.
- 4
First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour, or until doubled in size.
- 5
Shape the Breads
Once risen, punch down the dough and divide it into three equal portions. Shape each portion into a round loaf.
- 6
Second Rise
Place the loaves on a baking sheet sprinkled with cornmeal. Cover and let them rise for another 30 minutes.
- 7
Preheat the Oven
Preheat your oven to 375°F (190°C).
- 8
Bake the Breads
Bake the loaves for 25-30 minutes, or until they sound hollow when tapped on the bottom. Let cool on a wire rack.
Dipping Oil
- 9
Combine Ingredients
In a small bowl, combine the extra virgin olive oil, balsamic vinegar, minced garlic, crushed red pepper flakes, and fresh rosemary.
