Preparation of Ahi Poke Base

Prepare the Ahi Tuna
Cut the sushi-grade Ahi tuna into small cubes (about 1/2 inch). Place the cubed tuna in a medium mixing bowl.

Prepare the Cucumber
Peel and thinly slice the cucumber. You can also cut it into small cubes if you prefer. Set aside.

Combine Ingredients
In the bowl with the cubed Ahi tuna, add the ponzu sauce. Gently toss to combine. Then, fold in the cucumber and avocado cubes. Mix carefully to avoid mashing the avocado.

Prepare the Sushi Rice
If you haven't cooked the sushi rice yet, rinse 2 cups of sushi rice under cold water until the water runs clear. Cook according to the package instructions. Once cooked, let it cool slightly before serving.
Creamy Sriracha Drizzle

Make the Drizzle
In a small bowl, combine the mayonnaise, sriracha sauce, lime juice, and salt. Mix well until smooth. Adjust the seasoning with more sriracha or salt to taste.
Assembly

Assemble the Dish
In a serving bowl, place a scoop of the sushi rice as the base. Top with the Ahi poke mixture. Drizzle the creamy sriracha sauce over the top. Optionally, garnish with sliced green onions or sesame seeds if desired.
