Preparation of Ahi Marinade

    Cut the ahi tuna into small cubes and place them in a bowl. Add the citrus juice and ponzu sauce. Mix gently to ensure the fish is evenly coated. Cover and refrigerate for at least 15 minutes.

Cooking the Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker or saucepan. If using a saucepan, bring to a boil, cover, and reduce heat to low. Cook for 18-20 minutes until water is absorbed. Fluff with a fork and let it cool slightly.
