Method

Fried Chicken

    Marinate the Chicken

    In a large bowl, combine the buttermilk and chicken thighs. Cover and refrigerate for at least 2 hours or overnight for best results.

    Prepare the Breading

    In a separate bowl, mix together the flour, paprika, garlic powder, onion powder, salt, and black pepper.

    Bread the Chicken

    Remove chicken from the buttermilk, allowing excess to drip off. Dredge in the flour mixture until fully coated. Set aside on a wire rack.

    Fry the Chicken

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded chicken thighs and fry for about 6-7 minutes per side until golden brown and cooked through. Remove and place on paper towels to drain excess oil.

Honey Baste

    Prepare Honey Baste

    In a small saucepan, combine honey and butter. Heat over low heat, stirring until butter is melted and combined with honey.

    Baste the Chicken

    Once the chicken is cooked, brush the honey-butter mixture over the fried chicken before assembling the sandwich.

House Pickles

    Prepare Pickling Liquid

    In a saucepan, combine white vinegar, water, sugar, salt, and black peppercorns. Bring to a simmer and stir until sugar dissolves.

    Pickle the Cucumbers

    Slice the cucumber into thin rounds and place in a jar. Pour the hot pickling liquid over the cucumbers. Allow to cool, then seal and refrigerate for at least 1 hour before serving.

Marinated Onions

    Prepare Onion Marinade

    In a bowl, combine white vinegar, water, sugar, and salt. Stir until sugar and salt dissolve.

    Marinate the Onions

    Slice the red onion thinly and place in the marinade. Let sit for at least 30 minutes in the refrigerator.

Herb Sauce

    Mix the Sauce

    In a small bowl, combine mayonnaise, fresh parsley, fresh dill, and lemon juice. Mix until well combined and set aside.

Fries

    Prepare the Potatoes

    Peel and cut the potatoes into thin strips. Soak in cold water for at least 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot over medium-high heat. Fry the potatoes in batches until golden brown and crispy, about 5-6 minutes. Remove and drain on paper towels. Season with salt.

Sandwich Assembly

    Assemble the Sandwich

    On the bottom half of each burger bun, place a leaf of lettuce, followed by a fried chicken thigh, marinated onions, house pickles, and a generous drizzle of herb sauce. Top with the other half of the bun.

    Serve the fried chicken sandwiches with fries on the side.
