Fish Preparation

    Prepare the Beer Batter

    In a mixing bowl, combine the flour, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and thick. Let it rest for 15 minutes.

    Heat the Oil

    In a large pot or deep fryer, heat the oil to 350°F (175°C). Use a thermometer for accuracy.

    Batter and Fry the Cod

    Dip each cod fillet into the beer batter, allowing excess to drip off. Carefully place the battered fish into the hot oil. Fry for 4-5 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

    Cut the Potatoes

    Peel the potatoes and cut them into thick fries, about 1/2 inch wide.

    Soak the Fries

    Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

    In the same oil used for the fish, fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt and pepper to taste.

    In a small bowl, combine mayonnaise, dill pickles, capers, and lemon juice. Mix well. Season with salt and pepper to taste.

Serving

    Serve the crispy fish alongside the seasoned fries. Drizzle with malt vinegar to taste and serve the tartar sauce on the side.
